Potato rose

Thin potato slices arranged in a ramekin form a rose, with butter, breadcrumbs and chilli. Evenly thin slices help all the petals cook together.

LET’S GET COOKING

Method

  1. Wash and peel the potato, slice it thinly and place the slices in cold water while you prepare the ramekin.

  2. Use some of the butter to grease the ramekin and some of the breadcrumbs to coat it. Drain and dry the potato slices.

  3. Overlap the slices around the edge and work towards the centre to form petals. Scatter over the remaining breadcrumbs, the chopped chilli and the rest of the butter in small pieces.

  4. Bake in an oven preheated to 180 °C for about 20 minutes. Use a knife tip to check that the central slices are tender, and continue cooking if they are still firm.
