LET’S GET COOKING

Method

  1. Let the mashed potatoes cool until warm. Dissolve the yeast in a little lukewarm water.

  2. Mix the flour, eggs, softened butter, potatoes and dissolved yeast, then add the salt. Knead until the dough is soft and smooth, adding more water a little at a time only if needed.

  3. Divide the dough into two portions and roll them out into two rectangles. Scatter over the Parmesan, followed by the ham and cheese cut into small pieces.

  4. Roll up the rectangles and seal the ends. Place the two loaves in a baking tin, leaving room for them to rise.

  5. Cover and leave to rise in a warm, draught-free place for about 3 hours, or until the loaves are well risen.

  6. Mix the yolk with a little milk and brush over the loaves. Bake in a preheated oven at 175 °C for about 45 minutes, checking that the centre is cooked through.
