LET’S GET COOKING

Method

  1. Warm the honey over a water bath until fluid, then let it cool to lukewarm. Finely chop the mandarin peel.

  2. Mix the flour, sugar, cinnamon, pepper and food-grade baker’s ammonia. Add the almonds, peel, egg and honey and combine.

  3. Shape into low logs of similar size and place well apart on baking trays lined with baking paper.

  4. Bake in an oven preheated to 180 °C for 15–20 minutes, until starting to turn golden. Remove from the oven and carefully slice the logs while still warm.

  5. Spread the slices over the trays and return to the oven at 180 °C for about 10 minutes, until dry. Let them cool completely on a wire rack before serving.
